Overall, our farm is dedicated to producing high-quality organic products using sustainable practices that honor the environment.

Our figs and olive oil are a testament to the unique terroir of the south slope of the Gredos Mountains and the careful attention that goes into producing the final product.

We invite you to enjoy the natural flavors of our figs and olive oil, and to experience the beauty and bounty of our farm

Organic Walnuts

– Cold temperatures below 0°C for over 1000 hours ensure its highest quality.

– Irrigated with high mountain meltwater.

– Dried using the heat from shell combustion. Not washed with sodium hypochlorite.

– Distinctive extra light color, texture, and flavor from cold winters.

Our organic walnuts and wine are produced on a farm located 1053 meters above sea level, nestled in the foothills of the Andes Mountains. The farm benefits from the natural water supply of meltwater from the mountains, which is used to irrigate the crops and ensure their healthy growth.

The cold winters and warm summers create the perfect environment for growing both walnuts and grapes, resulting in exceptional quality and flavor.

One unique aspect of our farm is that it is also home to a small herd of sheep. The sheep are free to pasture under the walnut trees, providing a natural form of pest control and contributing to the overall health of the crops. The interaction between the sheep and the walnut trees creates a unique ecosystem that benefits both the animals and the plants.

Our organic walnuts are carefully harvested by hand and dried to preserve their rich nutty flavor and crunchy texture.

The fig trees thrive in the hot summers and mild winters, thanks to the natural spring water that flows from the soil.

All the fruit is carefully handpicked at the peak of ripeness and then sun-dried until they reach their softest and juiciest state. Our figs are bursting with natural sweetness and are perfect as a snack, added to baked goods, or as a unique ingredient in savory dishes.
